How to Make Tacos in the Microwave: Homemade Taco Seasoning Recipe Too!

Tacos are a favorite go to meal in our house.  See how I make them in the microwave for a quick meal on a busy night. 

Meal planning is a challenge in this house.  Let’s do an inventory on why this might be the case, shall we?

  1. Full time working mom A.K.A chef
  2. Picky eating husband with chewing difficulty
  3. Kids – need I SAY MORE?
  4. Food Allergies – must avoid eggs, peanuts, tree nuts and ALL LEGUMES
    1. If you don’t know what a legume is it is basically all beans, peas etc.  Green beans, chick peas, lima beans, navy beans, black eyed peas, green peas, BBQ beans.  If it is in the legume family we have to avoid it.  Factoid – did you know that the Peanut is a LEGUME and not a nut?  99% of the population think it is a nut, NOPE!  Tuck that little nugget away!

So our menu in the house gets into a rut with repeating the same meals over and over.  But one night that everyone looks forward to is Taco Tuesday!  Yes, ever since we saw The Lego Movie we’ve adopted Taco Tuesday.  Although tonight it was Taco Thursday but hey, life happens!  When I’m exhausted though I know that I can pop that meat in the microwave and throw the fixins on the table and I’m DONE!

Quick and easy taco meat in the microwave is easy!

The first time I made our taco meat this way no one could tell the difference.  When it pulled together so quickly and with the same flavor and consistency I really could not understand why I didn’t do this sooner! I’ll give you a few options to make the meat in your microwave.

Option 1 – my personal fav

So neat!  A colander insert for the microwave!

Tupperwave Stack Cooker – with colander insert.   It is no secret that I LOVE the Stack Cooker from Tupperware.  Actually this little baby was the reason why I became a consultant for the company.  I love to use this for meat because the handy little insert lets the disgusting grease and scum drain to the bottom bowl.  Easy clean up to!

Just put 1 lb of the meat into the colander insert and set the insert into the 1 3/4 Q bowl, cover with paper towel.  My microwave is 1110 watts.  I usually cook for 2 minutes then stir (TIP!  See below for my trick for creating taco meat very fine) and then cook for another 3 until cooked all the way through with no more pink.  When I’m done I lift out the colander and drain out the grease in the bowl below, wipe it out and put the meat in the bowl.  Now I haven’t used any more dishes!  I then mix the water and seasoning and heat it up right in the bowl.  Super easy and all I have to do is clean up the colander because IF there are leftovers, I just put on the lid that came with my stack cooker and pop it into the fridge!  Sweet!

Option 2

Microwave Safe Colander!If you want to copycat above, find yourself a microwave safe colander to put over a large microwave safe bowl.  If you don’t have one and need one I found the one on the left on Amazon, it is silicone which is microwave safe.  This one is pretty cool because it collapses too so you can store it without taking up much space.  If you would like to purchase it you can click here.  I receive a small commission from this purchase and it will help support this blog.  Thank you!


Option 3

Good old fashioned microwave bowl, dish or pie plate.  Make sure there are sides on it, you don’t want to do this on a plate.  A ton of grease and scum and water will be released so you want to make sure that you have high enough sides.  You’ll have to drain the meat using this method, it creates an extra step, but a good start if you don’t have the options above.

Taco Bell Copycat Homemade Taco Seasoning Recipe

Say that three times fast!  I LOVE this recipe.  I combined a few different seasoning recipes out there on the web to make the flavor that my family loves the most.  We’ve been using this for a few years now and it is perfect for us.

There is a SECRET ingredient to this recipe.  Wondra flour!  Wondra flour is a super fine flour that is PERFECT for sauce making.  You’ll want to thicken up your taco meat seasoning so that you don’t have this runny, watery mess.  This will coat the meat in a velvety sauce, mmmmmmmm.  {For your convenience I’ve included links to Amazon for any ingredients that may be hard for you to find.  Most stores will carry the ingredients but if you have trouble consider using my referral links below, we appreciate your support!}

Homemade Taco Seasoning just like Taco Bell


2 T Wondra Flour

2 tsp chili powder

1 tsp cumin

1.5 tsp dried minced onion

1 1/4 tsp salt

3/4 t beef bouillon granules (Psst. I prefer to use Better than Bouillon brand instead and add at the time of cooking)

1/4 tsp sugar

1/4 tsp garlic powder

dash onion powder

Mix it all together in a bowl.  Store in airtight container until needed.  To use – sprinkle entire contents onto browned meat.  Add 2/3 cup of water.  Cook until thickened and bubbly.

The secret to fine taco meat

Psst – I’ve got a secret for you!  I didn’t come up with this myself, I saw it on Rachel Ray but it is ingenious!  I’ve been doing this for years!  I HATE large chunks of taco meat, I prefer a finer texture.  It also helps my husband with eating as well the smaller the food can be the better.

Why didn't I think of that? Potato Masher for Fine Ground Beef!The key to making smaller and finer ground beef is to get out your potato masher!

After microwaving your meat for the first few minutes, break up the meat and push down with your potato masher to get a very fine meat consistency!

Easy!  It works like a charm! You can try this with any ground beef, chicken or pork.
