Best Swedish Meatballs Recipe Ever! EASY & Microwave Fast...
So easy Swedish meatballs, made is microwave for quick busy weeknight meal

Today was one of those days.  Looking at the clock at 3 pm and realizing I have NOTHING defrosted for dinner.  YIKES! After a super busy weekend (20 year High School reunion), not getting any grocery shopping done, having no backup plans and a super hungry family to feed, this was a recipe for disaster.  In comes the frozen meatballs to the rescue!  Oh how I love those things.  Not because they are healthy or even particularly tasty, but because they are EASY!  They are there just for a day like today, arriving to the rescue when I’m exhausted and still want something decent to feed the family.

What can we make with these beauties?  I’m glad you asked!  Why not the best Swedish meatballs recipe ever!!!!  Okay, okay, that is a tad dramatic but at this point when the family is hungry at 6 pm anything will do and I can always count on my 4 year old to eat meatballs in any shape or fashion and avoid the dinner time meltdown, this is going to be a win-win.  Being able to combine it with the microwave….now I’m in heaven!

It is so simple to make microwave swedish meatballs you will scratch your head wondering why you never did this before!  Well let’s get started!

Ingredients:

15-20 Frozen meatballs

2 cups water

2 beef bullion cubes or 2 t paste

1/4 cup butter

1/4 cup flour

2 heaping tablespoons of sour cream (or to taste)

Salt and Pepper to taste

Heat the meatballs:Frozen meatballs in Tupperware stack cooker

Add the meatballs to your microwave safe dish.

Tupperware Stack Cooker the most used cookware in my houseI love using my blue stack cooker from Tupperware and that is what you see me using above.  It is round which is the perfect shape for even microwave cooking and comes in various casserole sizes, and you can even use all the parts to stack an entire dinner with sides and dessert if you wanted.  Tonight I used all of the layers, one for meatballs and one for rice but cooked them separately.  That way I didn’t have to get out a bunch of extra dishes for the hubby to wash (he does all my dishes for me, aw).  Now you’ll remember from my post on getting started that when reheating food you should never go above 70%, well you can forget that because we’re going to follow the directions on the package.  I threw them in 100% power for 2.5 minutes.  Stir, then I put them in for 2 more minutes because I didn’t like how they were done so I did it again for another minute or two.

Remember there are no hard and fast rules here, use your best judgement.  The point of stirring is to move the food from the center of the dish to the outside and the outside to the center.  That way you can get an even cook instead of raging hot, evaporated resemblances of meatballs to feed to the dog later.  🙂

Now for the sauce:

NO cream of mushroom soup here!  NOOOOOO!!  Somehow I just cannot imagine an old Swedish lady holding a can of mushroom soup over the stove, comical!  Guys we are going to make our own roux here right in the microwave.  This is a traditional beef gravy, no tricks to it.

Melt that butter (1/4 cup), but don’t COOK it.  I put mine in 30 seconds at 70% just until it melts but some is still left solid.  That is how you want it, then stir and voila you have perfect, not separated butter.

 

For perfect melted butter in the microwave leave some unmelted

Stir in 1/4 cup flour to make a paste.

Roux made from microwave melted butterThen you do want to cook this for 30 seconds until it is no longer glossy.

 

Now mix 1 1/4 cup of HOT water (heated in the microwave of course!) with 2-3 teaspoons of bouillon paste.

 

Better than Boullion BeefI like to use the Better than Bouillon brand, beef flavor.

 

 

 

 

 

 

 

Whisk until dissolved now whisk that into the flour/butter mixture.

Beef gravy in the microwavePop that back into the microwave.  Heat it up for about 3 minutes 100% power stopping every minute to stir.  We don’t want clumps on the bottom.  When it is thickened the way you like it, then season with salt and pepper to your liking.  Stir in 2 or 3 T of sour cream at the end then pour over your meatballs.  DONE!

 

We served ours over rice, but you can serve over mashed potatoes or noodles.
